I have yummy news! I’m ready to share another recipe with you…Nice and juicy pie that you can make with all seasonal fruits. Melt-in-your-mouth, delicious.
I couldn’tbelieve it when I first made it, and was a little doubtful
about how successful the recipe would be, but it turns out that the almond
flour is what helps to give the pie a ‘melt-in-your-mouth’ sensation.

Ingredients

10.2 (oz) plum
1.6 (oz) sugar ( used brown )

Dough

4 (oz) butter
8 (oz) white flour
3 (oz) sugar
1 egg

FIlling

3 (oz) marzipan
3 (oz) sugar
1/2 stick butter
2 eggs
2 (oz) almond flour or finely ground almonds in my case :)

Directions :

1.  Cold butter cut into cubes, add the flour and mix with your fingers to
form a crumbly mixture. Add egg and sugar, stir quickly to get all the
ingredients sling. Wrap the dough in plastic box and leave in the
refrigerator for about 1/2 – 1 hour ago.

2.  Sprinkle a little flour on a table.
Divide dough into two equal parts and roll out thinly on a table. Coat
baking pan with a little butter and press dought into.
Cut out excess pastry which hanging over the edges. Allow to cool down
until filling.

3.  Filling ingredients should be at room temperature.
Stir marzipan and sugar until there is no lumps, bit by bit add butter and
mix.
Add eggs, one at a time and lightly interfere with the mixture. Finally
add the almond flour or grind almonds (should be very fine grinded, blanch
almonds first, remove their shell, dry and then grind. So get a lighter
weight).
It is important to stir filling briefly (if it is long during baking
could boil and separate).

4.  Pour filling over the dough Plum align with skin facing upwards and
gently squeeze into the filling. (Plum juice preserve)
Bake at 350 F approx. 25 min. Allow to cool in pan.

5.  Mix plum juice with a little sugar and cook as syrup. Pour syrup over the
cake and serve.

Tips & Tricks

Plums can be substitute with apricots, Rabab, apples or pears depending on
the season. If you use a lot of juicy and sour fruits like Rabab, add a
little more almond flour and stir fruits in flour, so will not fall all
the way to the bottom during baking.

Serving :

Serve chilled with creme fraiche, or vanilla ice cream.
